One of our favorite free things to do in the summer are the concerts and movies in the park that are held all over San Diego. Judging by all the fun I see on Instagram from friends all over the country, this is not an exclusively San Diego event! I am always looking for easy dinner ideas to make these weeknight adventures possible because while Avery is out of school, my husband and I still have to work. This sandwich is the perfect addition to any picnic and could not possibly get any easier to make!
These chipotle salsa verde chicken sandwiches are full on flavor and short on ingredients and many of them you can keep on hand which makes spontaneous concerts in the park even easier to attend! Here is what you need:
- LA MORENA® Chipotle Peppers in Adobo 7oz
- Jar of salsa verde
- Boneless skinless chicken breast
- Sandwich bread
- Romaine lettuce
- LA MORENA® Sliced Jalapeños (28oz)
When it comes to bread and sandwich toppings, obviously you can substitute whatever your favorites are, these are what we love. To start, I placed my boneless skinless chicken breast in the bottom of my slow cooker. I have made this with both fresh and frozen chicken and both work great, frozen will just need a bit longer to cook.
Next, I poured salsa verde over the top of the chicken.
Then comes the flavor kick, the LA MORENA® Chipotle Peppers in Adobo I always grab when I am at Food 4 Less. I love these because you can add as much or as little as you want and they give a bit of smoky heat to the chicken. If you don’t use the whole can, you can pop them in a food storage bag and they freeze beautifully. LA MORENA® products are always my go to for their high quality, so anytime I am looking to get out of my comfort zone and try some new recipes, they are the brand I trust. I used two because we are a medium heat family and we only had three chicken breasts cooking at the time. Then, add the lid, and cook on high for 3 hours. That’s it! If your chicken is frozen, you will need to cook on high for 4-4.5 hours but it will still come out great.
Doesn’t it look delicious and it only took minutes to put together!
I sliced up all our favorite toppings, these can be packed separately or you can make your sandwiches ahead of time, whatever works for your family.
If you would like to kick the heat up a notch, add some LA MORENA® Sliced Jalapeños which would also be a delicious addition to this sandwich!
Then you just add them to your basket with plates, utensils and some drinks and you are ready to go!
