I have been back on the 21 day fix eating plan for a couple of weeks now and I feel like lunch is one of the hardest parts of the day. For me this has a lot to do with the rules where I work, I can’t bring meat in my lunch which becomes challenging when creating lunches that are filling and fit with the plan. Today I am sharing my new favorite pizza recipe that fits 21 day fix but also can be easily made vegetarian! Check it out!
Here is what you need:
- 1 piece of lavash (you get a piece about the size of a sheet of paper for around 100 calories which equals 1 yellow)
- Pizza sauce
- Red pepper
- 1 blue of cheese
It is pretty standard, start with the sauce as thick or as thin as you want.
Then start adding your veggies- you can add whatever you want which is the greatest part about this recipe! I started with a layer of spinach on top of the sauce.
Then I added cheese, one blue container of mozzarella admittedly doesn’t go that far, but I am not a huge cheese fan so it is perfect for me.
Then I added sliced red peppers on top, I also like to add turkey pepperoni when I am at home but I am hoping I find a great vegetarian pepperoni to finish this off.
Once all the toppings are on the pizza then it just goes in the oven for 15 minutes at 375 degrees or until the cheese is melted to your liking. I like cheese to be almost burnt ideally so I put mine in the oven a bit longer.
