Sometimes weeknights need a little bit of help when it comes to dinner, not help that takes longer, but help that tastes better! This easy weeknight quinoa bar is quick and easy to put together (less than 30 minutes), uses many items that you probably have in your pantry now or can stock up on at Sam’s Club, and will be a hit with the whole family! It is even better for a last minute outdoor summer dinner with friends! One of the best parts about summer are all the additional memories that can be made with family or friends. I love a food bar in general for parties because I feel like it is easy to ensure that everyone can get what they want in a dish, so why not bring my go to for parties into dinner every now and again?! I took a spin on a favorite, build your own taco bowls, and gave it a makeover with a new pantry staple! This would also be a great recipe that you could easily make for a crowd for your next block party potluck and be a true block party hero! Check it out!
I have a household of five so Sam’s Club is just a necessity in my life, there are many things that it is just much easier and more affordable to buy in bulk because we go through them fast! 3 of those items are Swanson’s Chicken Broth, truRoots Quinoa and Pace Salsa and more specifically their new Pace Organic Medium Salsa. All can be picked up on Sam’s Club and can easily be kept on hand for any spur of the moment meals! It was so much fun and I was able to try so many great products and got some new ideas from the wonderful people hosting the event! Much more than just a sample booth, more like a resource!
I think what sold me the most on the truRoots Quinoa was the quality of this organic product and how quickly it cooks, in the past I have avoided quinoa because I thought it took too long but this quinoa cooks in about 20 minutes- amazing! To make the quinoa for the taco salad bar I followed the package directions which was a two to one ration of Swanson’s Chicken Broth to quinoa. I started by putting a cup of quinoa in my pan and added a tsp of garlic powder and tablespoon of onion flakes. Here is everything you need for the quinoa recipe:
- 1 cup truRoots Quinoa
- 2 cups Swanson’s Chicken Broth
- 1 tsp garlic powder
- 1 tbsp onion flakes
Next, I added the two cups of the Swanson’s Chicken Broth and brought it to a boil on the stove, once that happens, reduce to low and cover for 15 minutes, that’s it! I love the additional flavors you get from cooking the quinoa with the chicken broth instead of water.
While that was cooking I sauteed some boneless skinless chicken breast that I seasoned simply with salt, pepper, and smoked paprika.
Once those both were done, it was simply gathering all the toppings! I started with the Pace Organic Medium Salsa first and added other favorites like corn, black beans, limes and avocados- all shopping list staples in this house!

In addition to that, I used all my white bowls (the main reason I have all white serving ware, it all goes together!) to add the toppings and added some height and burlap for interest. Really, this only took an additional few minutes and made the family feel extra special!
