Tell me if this scenario sounds familiar. You wake up, on time if you are lucky, start the coffee and then get the breakfast and lunch boxes rolling. Depending on how many people you have in the family as well as how many lunches you make, this can be a daunting task. Some days I am on top of things and prep the night before, but many days I am busting it all out as fast as possible about 43 minutes before I have to be out the door. On those days, it is inevitably my own lunch that gets left off when I am in a rush ” I will be fine” is what I tell myself. Then my stomach makes me regret that decision around 11 a.m. Here is my solution to that problem.
I have found that since my own lunch is always the first to be scratched in a rush, I need to prep even more than I would for everyone else. I have been watching what I eat lately and one of the things I have found that I really enjoy is Greek Yogurt- yum! So delicious and so filling and even better since I am in a 3 year old class, fast to eat! I like to snack throughout the day because it fits my schedule better so I pack my lunch in a way that reflects that but one of the main staples in my diet is Greek yogurt and Chobani in particular! I love stocking up on a variety of flavors of the Chobani Flips, sweet snacks that pair Greek yogurt with natural mix-ins, especially the Almond Coco Loco and Key Lime Crumble flavors! I also loved Coffee Break Bliss with low fat yogurt and bsicotti pieces as well as Strawberry Summer crisp with the same graham crackers and white chocolate chips that I loved from the Key Lime flavor! No matter the variety, each and every cup of Chobani Greek Yogurt is made with fresh milk from cows not treated with rBST and proudly contains no artificial sweeteners, preservatives or flavors. These are my first go to when planning quick and easy to put together lunches for myself.
Another key piece to my lunches are some fruits and veggies to munch on and these I prep at least 3 days worth in advance in containers for the fridge. That way, much like the Chobani Flips, I can just grab a container and toss it in my lunch bag. Adding a trail mix bar for my drive to pick up my daughter and I am set!
Even I can commit to tossing four things in a lunch bag and running out the door, plus snacking throughout the day is way more healthy for my body and my mind than living on coffee! Plus, doesn’t this look yummy? Who is saying no to that?
It only gets better when you flip the toppings on top- I love feeling like I am having dessert in the middle of the day!
